• 2 teaspoons light spreadable butter or margarine
• 2 tablespoons sugar
• 2 teaspoons cinnamon
• 1/4 cup confectioners’ sugar
• 1/4 teaspoon vanilla
• 1 teaspoon milk
Preheat oven to 375° F. Spray four cups of a mini-muffin pan with nonstick spray coating.
Trim the crusts from the bread and flatten with a rolling pin. Spread one side of each slice with about ½ teaspoon butter. Combine sugar and cinnamon. Sprinkle 2 teaspoons cinnamon-sugar mixture over butter.
Cut each slice horizontally, into three long strips. Roll one strip into a spiral, similar to a cinnamon or jellyroll. Form the second around the first, and then add the third strip, forming one spiraled roll from each slice. Place each in a mini-muffin cup that has been sprayed with nonstick spray.
Bake 10 minutes or until lightly brown. Allow to cool 3 to 4 minutes.
Meanwhile, stir together confectioners’ sugar, vanilla and milk. Drizzle glaze over each roll. Serve warm.
